Double bevel
At the tip of the blade a larger knife angle is ground which adjusts the knife to a varying hardness of the material being cut. The double bevel achieved by grinding helps to cushion the resistance harder materials being cut. When the material is soft the acute overall knife angle exerts a lower pressure on the material which is bunged before and during the cut, and can push away the cuttings more easily.
